Crab Salad with pink grapefruit, avocado and a passion fruit dressing PDF Print E-mail

A truly amazing summer salad that is just packed with flavour and textures. Even the more demanding eater will enjoy this salad as it’s healthy but won’t leave you starving.

Cooking and prep time is about 15 minutes and serves 2

Ingredients:
2-3 large ripe tomatoes
4 passion fruits
1 tin of white crab meat (or use fresh crab meat although this will push the price up)
1 medium sized pink grapefruit
1 ripe avocado
2 baby gem lettuce
1 red chilly
1 handful of chopped fresh coriander
10ml of red wine vinegar
30ml of virgin olive oil

Method:

Start with making the dressing. In a mixing bowl add the red wine vinegar and olive oil.
Cut the passion fruits in half and using a spoon remove the seeds and add to the olive oil and vinegar

Mix well using a fork and add a bit of sugar if required (no pepper or salt)

Peel the grapefruit and segment the flesh, add to an empty mixing bowl.
Chop the chilli and add to the grapefruit
Chop the tomatoes and add to the grapefruit then add the coriander

Wash the baby gem lettuce, slice and add to the mixing bowl

Add the crab meat

Add enough of the passion fruit dressing to the mixing bowl and mix well

Serve immediately and finish with a drizzle of the passion fruit dressing
