Ostrich meat is a fantastic alternative to beef. Not only is the meat extremely lean and low in cholesterol it, in my opinion, has a much more balanced taste. Play around with ingredients and step away from the classic recipes for stake. Have it with a mango salad and chillies for example. The below recipe is simple and easy to cook. The sweet and sour taste of the onions used in this recipe are a perfect match for the rich taste of the ostrich meat

Cooking and prep time is about 40 minutes and serves 2

Ingredients:

2 ostrich steaks (I found mine on London Borough's market)
Mixed herby salad
4 teaspoons butter
2 medium red onions sliced
1 red chillie sliced
2 cloves garlic crushed
1 tablespoon of brown sugar
Salt and Pepper
1 tablespoon of red wine vinegar

Method:
In a medium skillet melt butter over medium-low heat.
Add onions and garlic and chillie
Cook, covered, for 13-15 minutes or until onions are tender.
Add brown sugar and salt.
Cook, uncovered, over medium-high heat 4-5 minutes or until onions are golden brown, stirring constantly.
Add the red wine vinegar to the onions and simmer for another 2 minutes
Take of the heat and set aside
Heat a frying pan and add some oil
When the pan is searing hot fry the ostrich steaks on each side for 3 minutes (medium - rare). Season once cooked
Leave the steaks to rest on a hot plate for 3 minutes
Once rested serve with the salad and onions spooned over the steaks
